Dried Chili Squid

Ingredients:
  • 400gm Squid
  • 1 Red Chili
  • 10gm Dried Chili
  • 20gm Ginger
  • 150gm Cashew Nuts
  • 1 Egg
  • 2 tbsp Cornstarch
  • 200gm Dried Chili Paste


Method:
  • Mix the squid with ¼ tbsp salt, 2 tbsp water, 1 egg, 2 tbsp cornstarch and 1 tbsp oil. Mix well and let it season for 15 minutes.
  • Cut the red chili and remove its seeds, cut dry chili into 1 inch length and slice ginger.
  • Heat a pan with 1 tbsp cooking oil, fry the cashew nuts and set aside
  • Fry the squid and set aside
  • Then fry the dried chili, red chili and ginger…add the squid, fried cashew nuts and dried chili paste.
  • Mix well and serve.


Paste Ingredients:
Chili, Black soya sauce, Vinegar, Salt, Sugar.

Sweet & Sour Chicken

Ingredients:
  • 400gm Chicken meat  (dice into cube)
  • 80gm Pineapple  (cut it into cube)
  • 1 Tomato  (cut it into quartered)
  • 1 Green Capsicum  (slice and remove seed)
  • 1 Egg
  • 200gm Sweet & Sour Paste

Method:
  • Put the diced chicken in a bowl and add ¼ tsp salt, 1 egg, 1 tbsp water, 1 tbsp cornstarch and 1 tbsp oil. Mix well for 15 mins.
  • Fry the chicken mixtures until crisps and set aside.
  • Heat a pan with 1 tbsp cooking oil, and add tomato, pineapple, green capsicum and mix well.
  • Then add the sweet & sour paste and let it boil.
  • Add the fried chicken and mix well.
  • Pour it onto a plate and serve.


Paste Ingredients:
Tomato, Honey, Vinegar, Salt, Sugar, Water.
